You’ll debone, you’ll filet, and learn about basic knife care and safety. We’ll use our cuts to whip up a tasty lunch, so there’ll be no waste.

Your worst enemy in the kitchen is a dull knife. Knife skills are often overlooked when it comes to cooking but they remain a fundamental part of the life in the kitchen. Our Knife Skills class is part of our Fundamental kitchen series, which includes sauce making and dough making. These classes can be taken together as a package or individually and will give you a good base in the kitchen for both amateur and more advanced home cooks. In this class you’ll chop, mince, slice, dice, debone, and filet your way to better knife skills which ultimately will make you more efficient in the kitchen – not to mention, impress your foodie friends.

Chef Eric will guide you through the selection of the proper knife for the job and teach you about knife safety and care. You will become more at ease with different types of cuts used in French cuisine while working vegetables, fruits, meats, and fish.

We will use our chopped vegetables to make a stock. You will make a soupe au pistou, learn to filet the fish of the day, debone poultry, and make a dessert of perfectly cut fruits.

We will enjoy the fruits of our labor at the end of class accompanied with a glass of wine.
